| Tofu Salmon Mousse

[4 Servings (make four 5 oz. portions)]

1 (14 oz.) package House Premium Tofu Medium Firm, using only 1/2 (7 oz.) drained and cut into 4 pieces
1/4 lb. smoked salmon, cut into 1/2 inch pieces
1/2 cup heavy cream
1 1/2 (1.87 oz.) envelopes powdered gelatin
4 Tbsp. water
1 ice cube
vegetable oil to coat containers dill, Italian parsley, or radicchio for garnish

Put water in a small microwave-proof dish, then add powdered gelatin and ice cube. Set aside for 2 minutes. See photos.

Heat gelatin and water mixture in microwave on High power, uncovered, for 10 to 30 seconds. Remove dish and set aside.

3.
Mix smoked salmon, Tofu and half of the heavy cream in a food peocessor until smooth. Add gelatin water mixture, and remaining heavy cream.
Mix another 10 seconds.

4.
Lightly oil the inside of 4 small containers such as souffle dishes. Pour Tofu and salmon mixture equally into each container. Chill in refrigerator until mixture
becomes solid. To serve, remove Tofu and salmon mixture from containers and place on a plate. Garnish with dill, Italian parsley or radicchio. Serve cold.
