INARI-ZUSHI (Sushi rice balls in abura-age)
Sweetly seasoned abura-age stuffed with sushi rice balls.
[Serves 2]    393kcal per portion; 1.7g salt
 

200g cooked rice
3Tbsps amazu
50g takuan pickles (finely chopped)
1tsp roasted sesame seeds
2sheets abura-age (for sushi)
300ml water

4Tbsps sugar
1Tbsp soy sauce

1. Roll a rolling pin on abura-age to smash the white part inside. This process makes it easier to open up the abura-age.

2. Put abura-age into an ovenproof bowl and pour 200ml water. Place a sheet of waxed paper and a small plate on it as a drop lid. Microwave on 600W for 4minutes. (2minutes on 1200W)

3. Drain the oil-dissolved water. Add <A> and 100ml water into the bowl, put a sheet of waxed paper and a small plate. Cover with the edge-open wrap and microwave on 600w for 2 minutes. (1minute on 1200W) Squeeze out abura-age lightly, and open them from the cut sides to make pouches. Turn over the cut sides.

4. Combine amazu with cooked rice and mix (sushi-rice). Add takuan and sesame seeds to sushi- rice and mix. Divide sush- rice into 4 and make long round shapes.

5. Stuff abura-age with sush- rice. Fold the edge of abruta-age over rice.
