Peel eggplants with a peeler. Soak them in water and rub with some salt. Wrap with plastic wrap.

Place a bacon rack on the turntable and place eggplants on both edges. Microwave on 600w for 3 minutes. (1 and half minute on 1200W) Remove the wrap, rinse with cold water and cut them into 4 bars. Cut the bars in 2 and arrange on a plate.

Garnish with grated ginger, pour on gomasu and serve.
