TENTSUYU
Dipping sauce for Tempura (Japanese fritter)

[Makes 260ml]    5kcal per potion (15ml); 0.5g salt
 

1cup water
3g katsuo-bushi (dried bonito flakes)
3Tbsps soy sauce
1Tbsp sugar
1Tbsp sake

1. Put all the ingredients in an ovenproof cup. Cover softly with plastic wrap. Microwave on 600W for 2 1/2 -3minutes. (1 and 15seconds to 1 and half minutes on 1200W) Turn off as soon as it begins to boil even if there is time left.

2. Strain into a preserving bottle. Screw top and cool. Lasts for a month in a refrigerator.

* Without using microwave, put all the ingredients in a pot and place over high heat. Bring to the boil and strain into a preserving bottle.
